Apple Pie… mmmmmm PIE!

In Granny M.’s cookbook this is really not a recipe per se … but rather more of a paragraph describing how she makes her apple pie! Her apple pie always turned out PERFECT. It always had a light flaky golden brown crust and the filling was always sweet and soft with just the right amount of warm spice flavors.

We were always given a choice when she was serving it up all warm and fragrant of either having a big scoop of vanilla ice cream on it or a thick slice of cheddar cheese. As a child I always thought it was strange that the adults would always pick the cheese and not the ice cream. Now as an adult I admit I actually like both…. but ice-cream is still way better!

I would have rather had a picture of a perfectly plated piece of pie.... but I just could not seem to accomplish that.  So I ate it instead.

Apple Pie

Warm and sweet, the perfect apple pie.
Prep Time 30 minutes
Cook Time 35 minutes
Total Time 1 hour 5 minutes
Servings 8 people

Ingredients
  

  • 1 batch pastry dough
  • 6-8 med. size Apples peeled and sliced
  • 1/2 cup sugar
  • 1 TBSP flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg fresh grated is best
  • 1/4 cup butter cut into small cubes

Instructions
 

  • Pre-heat oven to 400 degrees F.
  • Granny M said this: "I myself prefer McIntosh apples for apple pie." However, I like a tart hard apple for apple pie. Something like a Pink Lady or a Ginger Gold.
  • Peel and slice the apples into the bottom crust alternate with 1/2 cup sugar mixed with the flour and salt. Sprinkle with cinnamon and nutmeg on each layer. Dot the top of the apples with the small cubes of butter before adding the top crust.
  • Don't forget to cut air-holes into the top crust.
  • Bake at 400 degrees F. for 20 minutes.
  • Lower the heat to 350 degree F. and bake until apples are soft. You can test the apples with a fork through the air holes.
