I can remember sitting in my Granny’s kitchen watching her lightly pull together her pastry dough, her small hands all dusty with flour.

She would be laughing and telling me how she use to get up really early every morning and go into the small cafe in town. She had an early morning job to bring in a little extra money. Every time she made pies she would tell me the story of how she would make the pastry, have it rolled out and filled with all kinds of different fillings….all before 5:00 am!

She would make at least 50 pies each morning (all different flavors) for the cafe to sell to the crews of men who where working the oil-fields during the day. By the end of the day every slice of every single pie would be sold and eaten!

Granny Mack made the worlds greatest pie. Her recipe calls for LARD…. yes you read the right, I said LARD. I have never in my life bought lard, I didnt even know they still SOLD lard! (They do in case you care, it is in the Hispanic/ethnic area of the store). However, in the interest of making Granny Mack’s recipes exactly has she has written, Joel and I searched out the LARD.

I always substitute butter for the Lard. It was fun to try it the way Granny M. would make it …. but I think that I will go back to the butter for my pastry in the future. I have a hard time wrapping my head around using LARD.

 

Pastry

Very tender, flaky crust.
Prep Time 10 minutes
Total Time 1 hour 10 minutes
Servings 1 Pie (Top and Bottom)

Ingredients
  

  • 2 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup lard
  • 4 -6 TBSP ICE water

Instructions
 

  • Blend the dry ingredients together.
  • Add the lard and mix lightly with finger tips until particles are about the size of split peas.
  • Add water slowly, 1 TBSP at a time. mix carefully until the dough just hangs together.

Granny M.'s Note:

  • If your pasty is a little too soft use a little more flour to roll it out. This is enough for one double crust pie or two shells.

My Note:

  • I make this in my food processor. I just pulse it until it all comes together. I wrap it up in saran wrap and let it rest in the refrigerator for at least 1/2 hour before I roll it out.
