Lemon and Celery Ice-Pop

Hello Boys!

Bright humid sunny days and hot sticky nights… that is Georgia.

When we first moved to the South all three of us felt like we had moved to another planet! The first summer in Georgia was an interesting one. The air was so thick, it was hard to breathe. Even standing in front of a fan you still felt hot. It felt like we would never be cool again. Strange as it sounds, some days it was even too hot to go outside to the pool! You both went from having to be dragged inside at the end of the day to me forcing you to go out for an hour.

Funny how over time, strange became normal, and normal became home. Georgia is home: the sun, the humidity, the lightning bugs, and the singing cicadas. I love that we have found our place.

We may love Georgia, but it is still so stinking hot in the summer! Which is why we always have fresh paletas or ice-pops in the freezer. This fresh lemon and celery ice-pop is amazing! It is one of my all-time favorites.

The combination of the lemon and the celery make these ice-pops taste the way a perfect summer evening smells. Sweet and tangy, with just a hint of fresh bright green … if green had a taste, that is.

Lemon and Celery Ice-Pop

Fresh lemon and celery go together perfectly. Sweet and tangy with just a hint of fresh bright green .... if green had a taste, that is.

Ingredients
  

  • 3/4 cup lemon juice (3-4 large lemons) Bring to room temperature. They will juice better.
  • 1 cup simple syrup Directions below
  • 1/2 cup fresh celery Juice Use either a juicer or a blender. If using a blender add 1/4 cup water and be sure to strain before adding to mixture.
  • 1 cup water

Simple Syrup

  • 2 cups white sugar
  • 2 cups water

Simple Syrup

  • Simple syrup is easy to make! All it is, is equal parts sugar and water. Make extra and keep it in the refrigerator.
  • In a heavy bottom pot add 2 cups sugar and 2 cups water. Bring to a boil. Allow to boil for 2 minutes. Stir often to make sure the sugar has all dissolved. Remove from heat and let cool. Store in a tightly sealing jar in the refrigerator.

Lemon Celery Ice-Pop

  • Juice the fresh lemons. A large lemon will have between 3 and 4 TBSP of lemon Juice. Make sure they are at room temperature before you juice them! They will give you so much more juice.
  • Juice fresh celery. I have a juicer, so this is easy peasy. If you do not have a juicer don't worry! Use your blender. Add 1/4 cup cold water and blend it up really find. Make sure that you strain your celery juice before you add it to the lemon juice.
  • Add water and simple syrup. Start by only adding half of the simple syrup, taste a little bit. If it is not sweet enough add a little more simple syrup.
  • Pour into ice-pop molds and allow to set in freezer for 6 hours!

  1. What a seriously awesome flavour combo! I never would have thought to add celery to an ice pop but now that I think of it it would be super refreshing. I’ll definitely be trying this!

    Wow, looks so good. I will be trying this. We are in the north…. in Canada, but it has been very, very hot this year. This would help.
