One Bowl Chocolate Cake

Happy Happy Dec 1, Boys!

Only the best time of the year! There is so much magic in the air in the days leading up to Christmas Day. For me, it is all about the days leading up to Dec. 25 rather than the actual day. I love the feelings of goodwill and kindness that come from most everyone you come in contact with. People are a little more patient, a little more loving, a little more gracious… a little more hopeful.

I love that the Savior and His example is something people are trying a little harder to follow during the month of Dec. I love that I am trying a little harder to be more Christ-like in all that I do and say.

I love that this is the only time of year I focus less on how much I weigh and how many calories something has, and more on the glorious beauty and bounty of food! Gosh dang it, food is fantastic!

Food is memories, good food is good memories. This time of year we eat a lot of good food, making it easy to visit so many good memories.

Today for dessert we will be noshing on some easy, yet oh so yummy, One Bowl Chocolate Cake. This just so happens (according to your great-Granny Mack) to be Big Grandpa’s favorite chocolate cake and one that Granny Mack would whip up for a quick dessert just about every time we would be at her house for a visit! I remember her telling me a story of how one night she made this cake when just her and Little Grandpa were home, and they ended up standing around the oven with forks, eating the whole cake as soon as she had pulled it out. It was still a little too hot, but they ate it anyway!

Most of the times she would just dust the top with icing sugar and serve it with either sweetened condensed milk or a scoop of ice cream. However, if she was feeling fancy she would frost it with her thick, rich, and creamy Butter Cream Frosting.

Ingredients
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk Use either whole milk or half and half
  • 1/2 cup butter room temperature
  • 1/4 tsp salt
  • 1 tsp soda
  • 1/2 tsp baking powder
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 cup cocoa powder
  • 1/2 cup boiling water
Servings: people
Instructions
  1. Add the ingredients to a mixing bowl in the order listed.
  2. Add the boiling water - do not mix until you have added the boiling water.
  3. Beat on high for 2 - 3 minutes.
  4. Place in a 9" cake pan and bake for 35 minutes in a 375° F oven. NOTE: You can use any size cake pan, just watch to make sure you do not over-bake it. When you stick the knife in to check, it should have just a touch of batter sticking to it.
  5. Remove from oven, allow to cool... or not! If you want go ahead and eat it all right from the cake pan while it is still piping hot, you'll be in good company.
  6. Yum!
Recipe Notes

Granny Mack's Notes:

I always bake mine in a 350 degree. F. oven and 35 - 40 minutes is still long enough.
However, I bake mine in a 7" x 11" pan instead of the 9" one.
