Strawberry salsa is one of the early summer time treats that you both have grown up with. All of us have the same problem, once we start eating this salsa it is almost impossible to stop. It is just so yummy. For the last 17 years it has been one of our favorite summertime food traditions.
This recipe for strawberry salsa is by far one of the most unique salsa recipes I have found. It is slightly sweet, a tiny bit spicy, and mostly savory.
I remember the first time I had it. We had just moved from Okotoks, Alberta to Saskatoon, Saskatchewan for your dad to attend university. The townhouse complex we moved into had a small playground. I would bring you boys to play there most afternoons (well, Bryson would play. Lochlan, you were only 2 months old so you just drooled) One of our new neighbors (whose husband was also in school) sat down beside me to watch her son play one afternoon. She had a giant silver bowl of red salsa that she balanced on her lap and a big Costco-sized bag of corn chips that she plunked down in between us.
Strawberries, cilantro, green peppers and Russian dressing? Honestly it sounded so weird.
I wonder who first thought “Hey! I bet it would be so tasty to mix strawberries and Russian salad dressing…. and maybe I’ll throw in a little green pepper and eat the whole mess with some corn chips?”
It was a genius idea. It is a strange combination of ingredients that when mixed create a sweet red nirvana!
