This is a super quick and easy dressing.
If you are looking for something to pop a plain salad? Try this! this is the dressing you should try. Not only is it the perfect dressing on a simple salad, it takes Buddha grains and veggie bowls to a whole new level. Try this fantastic dressing as a dip for fresh veggies or even crispy oven chicken strips.
It is full of flavor, with a thick and creamy texture – you would never know it only has a fraction of the fat of regular peanut dressing.
The key to this dressing is using really great peanut powder (my favorite is Crazy Richard’s Pure PB. I buy it at the local Publix grocery store), and fresh good quality tofu. The surprise ingredient is nutritional yeast which bumps up the umami taste.

Creamy Peanut and Tofu Dressing
Ingredients
- 2 tbsp soy sauce
- 1 tbsp seasoned rice vinegar
- 1 lime zest and juice You can leave out the lime and just use 2 tbsp of the seasoned rice vinegar. I make it both ways and both are delicious.
- 3 tbsp pressed peanut powder Best brand: Crazy Richard's Pure PB
- 1/4 cup soft fresh tofu
- 2 cloves garlic grated
- 3 tbsp fresh cilantro minced
- 2 tbsp nutritional yeast I love this stuff - it is delicious! It adds a really rich umami flavor.
- 2 whole green onions (white and green parts)
- 1 jalapeño pepper seeded and de-veined. OPTIONAL
Instructions
- Assemble ingredients (I usually add a jalapeño - not pictured here)
- Add all ingredients to your blender. I take the time to grate the garlic, only because I want to make sure I do not have any large chunks of garlic!
- Blend...
- ...until smooth and creamy.
- Keep in the refrigerator in a tightly sealed jar. It stays yummy in the fridge for a week!
- This dressing is so amazing on a Buddha bowl! The rich savory peanut taste goes perfectly with the mixed grains and the fresh vegetables.
