Hi Boys!

I think that it is safe to say that jellied salads are all but a thing of the past! However, in days of  yesteryear being able to produce a perfectly molded Jell-O salad filled with all its hidden treasures  was the true test of a home chef.

I can safely say that my granny practiced this art! We had a beautiful tall perfectly molded salad at every important family dinner. Did it taste good? Funny you should ask! Strangely, it DID!! It really did taste good. I can remember how red and pretty it always looked on my Thanksgiving plate nestled next to the slices of turkey, corn and mashed potatoes.

Will you like it? I think it is probably safe to say that yes, Bryson, you will like it!

Lochlan, you will be a little afraid to try it…. lemon Jell-O mixed with tomato juice, onions, and cottage cheese….. Hmmmmm, maybe not your thing! Try one bite for me …. just so you can have a little tiny memory!

Fancy Jellied Salad

A savory Jell-o salad. Perfect for any Thanksgiving dinner table or if you want to impress the ladies in your bridge club!
Servings 6

Ingredients
  

  • 1 cup tomato juice you can use tomato soup in place of the juice
  • 1 pkg lemon Jell-O
  • 1 cup celery finely diced
  • 1 Tbsp onion finely diced
  • 1/2 cup mayonnaise
  • 1/2 cup cottage cheese
  • 1 pinch salt

Instructions
 

  • Heat the tomato juice until it is very hot, add the lemon Jell-O powder and stir until all the sugar crystals are dissolved.
  • Allow the lemon/tomato mixture to stand until cool and then add all the remaining ingredients. Set in refrigerator to cool.

Notes from Granny Mack!

  • I wait until mine is partly set before adding the remaining ingredients.
  • This salad can be added to, or some of these ingredients omitted, but the basic ingredients are a lemon jelly powder, tomato soup or juice and the salad dressing.
  • To make it a little more fancy, it can be arranged on lettuce leaves and dressed up pretty with all the trimmings.
  • I have always used the tomato Juice so don't know how the soup works.
