I was writing a different post and I kept getting distracted. …I couldn’t decide if I was hungry or thirsty. It seems like it should be an easy problem to solve, right? Drink a little water, and if I am still distracted, I must be hungry. The only problem is that I am sitting at my desk. Upstairs. So the closest water to be found would be out of my bathroom tap.
No.
So that means the closest water (and food, for that matter) is a whole flight of stairs below me. The dog days of summer are hanging on here in the sultry South. August in the South means humidity and heat, so I am embracing lethargy, inactivity, and indolence. I need motivation to move…
I know the only prepared food downstairs is the leftover homemade “pigs in a blanket,” and I had already had two of those. So no motivation there.
Hey, boys! Remember that one time for Sunday supper I made pigs in a blanket and that’s it? No sides, no veggies… Just hotdogs wrapped in bread dough and baked in a hot oven, in a hot kitchen. Do you remember how we didn’t even eat at the table? I just grabbed two and left the rest of the little piggies all snuggled up in their quilts on the stove top and walked away? Did you two eat? I don’t even know. All I know is I went and collapsed on my bed… IT’S SO HOT!
Who uses the oven in the dog days of summer?
My distracting stomach has a lot of power to motivate. So, I left the blog post I was working on and went and stood in front of the freezer. With the door open, for like 5 minutes (just kidding Joel, it was only 1 minute… 2 tops).
The deep freeze was filled with summertime gold! A selection of homemade ice-pops! I rooted around in them and found the last, lonely, Spicy Jalapeño, Honeydew and Cucumber Ice-Pop.
I think if I had to pick a favorite – like if I could only ever make or eat one flavor of ice-pop for the rest of my life ever, it would be this one right here. It is sweet, spicy and bright. And so, so refreshing on a hot Southern summer day. Even the colour is refreshing – bright green, just like the leaves in spring. …to remind you of when the weather is perfect in the South.

Note: I use a juicer to make these, however, you can use a blender. Just make sure you strain it through a cheese cloth!
Spicy Jalapeño, Honeydew and Cucumber Ice-Pop
Ingredients
- 2 1/2 cups honeydew juice about one small honeydew
- 2 cups cucumber juice depending on size of cucumbers, you will need between 1 and 2
- 2 to 3 tsp Jalapeño juice you will get about tsp per Jalapeño
- 1 cup simple syrup
- 3/4 cup lime juice and lime zest
- 1 1/2 tsp sea salt
Instructions
- Assemble your tools and ingredients.
- Using a juicer, juice all of your fruits and vegetables. I always keep the juice from each ingredient separate, so that I can mix and taste as I go along.
- Mix all ingredients, except the sea salt. Add the salt in 1/2 tsp increments. Sometimes I use it all, sometimes I do not. It just depends on the produce.
- Fill ice-pop molds and cover with plastic wrap. Put them in the freezer and set a timer for 1 hour. In 1 hour come back and insert the Popsicle sticks. If you try to insert them too soon they will not stand up straight.
- Freeze for 6 to 7 more hours and enjoy!
- Strangely, I do not have any pictures of the finished ice-pops! And I just ate the last one from this batch, ...so I guess I had better make a new batch this week!
This is the MOST unique pop combo I’ve ever seen. Spicy and cool at the same time. I’ll have to try it!
PS My fiance has the same blender and he makes juices all the time. I’m very excited to marry and move in with him so I can use it hahaha 🙂

What a great idea! You could sell those for big profits here in Mexico. Over here, there are pops made with chili, but I have yet to see a jalapeno popsicle. I might steal your idea 😉
