Tropical Green Bean Smoothie

Smoothie Time, boys!

I don’t know if either of you remember this, but before we married Joel, I blew up three blenders. We would have smoothies so often that I went through 3 blenders in less then 3 years! As a wedding present, Joel (being the engineer that he is) spent a couple of hours researching blenders and gave me the very best one! 10 years later it is still going strong!

I think smoothies are one of the best breakfast ‘on the go’ choices. They fill you up and satisfy you at the same time.

I love green smoothies.

You both like them…. as long as there is a correct amount of fruit mixed in with the kale or spinach.  This is one of my favorite mixes – it is not too sweet and not too heavy. Green beans are such a sweet, bright vegetable they work perfectly in a smoothie. If I am making it for you guys I use spinach instead of kale. Spinach makes it a much sweeter smoothie.

Tropical Green-Bean Smoothie

Bright green smoothie. Green beans, mango and pineapple make a sweet smoothie without the added sugar.
Prep Time 15 minutes
Total Time 15 minutes

Servings 2 people

Ingredients
  

  • 2 cups kale
  • 1 cup fresh green beans
  • 1/2 cup cucumber
  • 1 Tbsp fresh parsley
  • 1 cup frozen pineapple chunks
  • 1 cup frozen mango chunks
  • 2 Tbsp limeade
  • 1 cup water
  • tiny pinch kosher salt

Instructions
 

  • Add the frozen fruit to the blender first.
  • On top of the frozen fruit add your cucumber, green beans and limeade. The parsley and kale go on the very top.
  • Add one cup of water.
  • BLEND!
  • And blend again!
  • You want to make sure the kale is fully blended up which is why you give it a couple of whirls with the blender.
  • Add a tiny pinch of salt - this brightens the flavors. It is optional.
  • Pour into your glass. I like to use mason jars, mainly because I have so many.
  • If you have extra, cover it up and store in the refrigerator. It makes a great afternoon snack or you have breakfast already made for tomorrow!

  1. I love green smoothies too, but I’ve yet to try green beans. I don’t think I’ve ever seen this anywhere else. Might just have to try it. Even my baby girl drinks green smoothies with me. But I can’t convince the husband to try them.

    • If you like green beans you will love it! They are so sweet and fresh tasting, I think they are great in a smoothie.

    The beans and cucumber provide the perfect base for a smoothie just add the fruit and you have a great tasting healthy drink.
